I recently acquired a couple new Capuchin's. These hail from a cutlery in Foix, France called Savignac who have been making these kinds of knives for over 100 years. My understanding is that their current designs, while based on the original Capuchin design, are unique, trademarked and paid for by them.

The Le Grat (named for one of the cutlery's ancestors) is probably my new favorite knife. This one is in 14C28 stainless and a solid piece of cow horn tip.

My Opinel N°8 went AWOL a while back, (I too ignored the lock ring). I'm thinking of replacing it with a N°5. If I get a N°7 or 8, I might just remove the new fangled lock ring. Opinel only added it in 1955.

By the way, the friction folder goes back a little more than a couple hundred years. 😷
I found this Oldest Pocketknife Found (so far) an interesting read. The friction folder goes back a little farther than I thought. 😳

Hey bud, I've got a number 5 Opinel, and I LOVE it! Light in the pocket you can forget its there, and it cuts like the dickens. When I used to carry my number 8, I don't think I ever used the locking ring. If 65 years of French working guys got by with no locking ring, then the heck with it.
 
I bought a second Pallares “Gabatcha” knife thinking I would make a slightly larger and more comfortable handle for it. I think I may have made it a little TOO chunky.

The wood is olive, I’m thinking of trying beeswax as a finish.
I guess the piece of olive I bought from the woodworking store wasn’t as dry as I assumed it would be. I left the knife closed and the blade rusted and pitted OVERNIGHT.

That never happened with the last 2 olive handles I made. I guess I will sand out the inside of the blade well a little more and let it dry for a couple of weeks to see what happens. Might have to use varnish on it or something.
