Opinions of Buck's Kitchen Knives

eveled, the short answer is, no. I cannot clearly read the stamp on your knife but is it a 2 line? If so, that knife is rare. This is a good time to bring this point up
as no one has mentioned this in our discussion. Notice all these early Empress kitchen knives are stamped on the left side. Which is Rare for a Buck fixed blade. This method continued until about 1986, with the year date stamp (about 14 years). Then the stamp was changed to the right side like most all Buck fixed blades. There were several different choils used for the model 107. In about 1984 Buck dropped the English script stamp and went to a block letter style stamp.
Then around 1989 the pouch sheath was dropped (the first pouch sheath for Buck) and a stitched sheath was offered. DM

accidentally "break" ........really just get rid of glass board and feeling badly for "breakin" it buy them a nice quality wood board.......
 
David. I should have said it’s not my knife. It is one listed on eBay. Here is the tang stamp.

And yes Brhowser87 I meant “accidentally” break the glass cutting board. Not over anybody’s head. If they are cooking good food you probably want to step lightly. Pick your battles.

In my case I’m the only one who can cook. Everyone else in my house just burns stuff and makes messes. I have to sharpen knives every time I use one. I have to reseason my cast iron almost every time to. It’s brutal. Don’t even get me started about the mess they make out of my Webber grill. They insist barbecue sauce goes on when the meat is raw, then you burn it on.

I bought into two sets of the Paperstone last year when the factory ran the 30% off sale. They sure are nice looking knives! I really like Paperstone as a product and have a few folders and spreaders from the Travelmate sets with it on them. As far as the kitchen knives go, I may be in the minority because I am not really a fan of the shape of the handles. I would like to see the corners on the grip be less square as in more rounded corners along the length. I may "grow a pair" and try to do some customizitation of the Paperstone with my laminate trimmer with a round over bit. The small paring knife is a bit "different" too. The blade seems too short for the length and size of the handle.

Its hard to purchase some things without touching and feeling them. I kept my knives because they look so nice and they weren't too expensive but I am sure that if one jumped and was unhappy with their purchase that Buck would let you return them.
My exact same thoughts, but i wanted the "Buck" set particularly the stag but couldnt justify it. Thats why i got the paperstone so when i get time id like to change the handles, mayb in the nxt ten years, lol

The Moderne set has in it 4 1/2" plain edge steak knives, which some gents here want. It also has a nice 6" boning knife a 9" carver and 10" beef slicer.
I've seen 10 & 11" beef slicers offered by different manufacturers and I've always wanted one. Does someone have experience using this model? DM
 
I'll try to find a suitable steel and make a 10" beef slicer. I like this pattern. DM

Old hickory/ontario knives makes both a 10" and a 14". Yeah they are carbon steel, but I prefer it to cheap stainless. I grew up with 'em.

You can pick em up for less than $25 on the "big river".
