You will feel less resistance with a lower angle edge as long as the blade is ground decently thin behind the edge. There are a bunch of variables but that's the basic answer.
I like slicers. When I get comfortable with sharpening, I'm going to experiment with my OD-2 a little bit.

Be careful! Low edge angles can be addictive! I used to match the factory angles of knives I'd get and just make them a bit sharper and shinier but after I tried a few low angled edges, I was hooked. I don't go higher than 30 inclusive anymore. I like a 30 inclusive edge with a 40 degree tertiary bevel from the sharpmaker for my all around cutters. Anything else gets the 12 per side secondary with a 30 degree tertiary.

Excuse my ignorance, but what exactly is a bevel?

Oh, I thought a bevel was a something a lot more complicated than that. Well thanks for the help guys. I'm glad you tolerate my excessive questions lol. How does one go about adding a secondary bevel? And when you have a secondary bevel, it makes the edge less prone to rolling/chipping?

Whoops, in that last post I meant microbevel, not secondary. How much more is a microbevel than the secondary bevel? Is there like a certain degree more that a microbevel should be than the secondary bevel, like 5 or 10 degrees?

You need to either be much more subtle, or just post it on the Exchange. You could get busted for obvious selling solicitations like that sir. :(

I've seen many do a 30 degree (inclusive) for the secondary and a 40 degree micro bevel. My guess is it aligns with the pre-set angles on something like the SharpMaker, making maintenance easier.

I believe that you are correct
