Now you've got me wondering how sharp I can get my knives.

Once I sell one of my knives on evilbay, I would be glad to throw in a $5 bill.



Question: If I still have a decently sharp edge, is it necessary to still start sharpening at the lowest grit stone and keep working my way up, or can I start somewhere in the middle, like 600 grit?

if the edge isn't damaged, and your secondary bevel is still at the degree you like, then yes you can start at a medium, or fine grit. Depending on the condition.

Chester, I'll gladly through some money in. When is the deadline?

I think I'm going to get one of these. jdavis highly recommends it.

I got the HEST reprofiled last weekend but I kind of rushed through the last part because I was at my sisters place and I wanted to get it over with so I could spend time with her so it turned out "cloudy". So today I decided to start back at the 120 grit moldmaster and freehand it to even out the scratch pattern. I went up to 600 grit (One of my favorite grits to stop at. Gives you a nice, toothy yet refined edge) It has a nice "dirty mirror" edge now.
