I actually finish on either the 600 or 800 grit, now that they've been worn in. It took about 25-30 knives for them to smooth out, but the 800 looks closer to the 1000 when it was new. That being said, greenie's right, as the 600 grit looked pretty rough for the first 20 knives. I wouldn't have finished on that at all back then. Also, since the 100 grit stones have worn in, they aren't as abrasive as they used to be, and I just got the 50/80 grits a few days ago. I'll be breaking those in on Manny's old Tenacious and some other things before they touch a higher end piece.
I had the Edge Pro for a while...probably just short of a year. It was pretty good, and got great edges, but nothing like the Wicked Edge. The WE isn't foolproof though, and I went in under that assumption and jacked up two knives before I got through the learning curve. However, it's a minor curve and if you go slowly, you'll find out what works and what doesn't. I'm very very happy with the WE, and wouldn't go back to anything else. It's a great reprofiling tool, and a great sharpener. I still touch up on the Sharpmaker, and when I see the microbevel getting a bit thicker, I go back on the WE and freshen it all up in a few minutes.
It's worth buying, and I agree with greenie that the Pro Pack is worth it. I personally say get the Pro Pack 1, as the 2 is a bit much, and I've been getting along fine with the 1. You can actually just flip the arm joints around to the non-graduated side to get finer adjustment. If you tighten them down with a small rag, you can get them tight enough so that they do not move. I find however that the single degree graduations are best, since once I set the bevel, it's easier to reproduce without an infinitely adjustable joint.
Btw, the 0801 is still effing awesome. It cuts soooooo much!
