Monofletch, I'd like to have that knife if its available.
So I'm going to throw in some creativity with a PIF right in my request. I'm putting up a Chinese Chef Knife Pattern by Dexter-Russell made in the USA. It's an industry standard knife in Chinese restaurants, so there's nothing fancy about it. It's a soft steel rockwell probably 54-55 and I only know because these things are not meat cleavers but meant for fine slicing. I hacked away at a frozen pork butt once and I dented the edge. I'm going to fix the edge before sending. That was until now...
So here's the kicker:
Originally, I wanted it to go out to someone who hasn't claimed anything yet in the PIF threads to bring in some new blood and wanted it to go to someone who could not normally go to a store near them (they sell online for like $40) but is interested in cooking.That said I posted it up twice and the threads closed twice.
So now!!! I would love for it to go to a knife maker or a home file knife maker amateur or not who hasn't taken anything yet who wants to reforge/regrind this huge chef's knife into something NASTY and useful. I.e. could they design something for this particular Rockwell hardness otherwise could they put a heat treat on it to make it harder before slapping on a new handle? Would love for them to share the after results on the forum. Amateur knife makers should apply!
