Nice work! How often/what is your process for maintaining the edge?
After sharpening like that, especially if the cutting edge starts to dull evenly, I mostly use a leather strop to realign the edge. In fact, if you know how to do it well, you can extend the sharpness for an incredibly long time.
In fact, in the context of normal knife use, you rarely need to sharpen it. But for heavy use—like when I carve wood, strike something with it, cut tough materials, or deal with meat, bone, or horn (which I often do just for testing and curiosity to see the results)—in those cases, you have to sharpen the knife frequently. No miracles here; if you're hitting bone or horn with a knife, it’s going to need sharpening! 😅
