Here are two German made knives that were done under contract for Jim Parker.
The first one is a 'Bulldog' four blade Congress that was offered by Jim Parker when he owned the 'Bulldog' brand. I believe the maker was the same German factory that had supplied knives to the original owner and founder of the Bulldog brand, (that maker was the Friedrich Olbertz Factory in Solingen, Germany).

The second knife below, a Lady Leg knife, was made using the C Platts & Sons brand name that Jim Parker had also purchased, (sometime during the early 1990's?). I believe this knife was made by the same Friedrich Olbertz firm that was making the Bulldog knives for him.

Here is a German made Simmons Hardware. I don't know who made it. Carter's guide to German Knife Makers has no reference to Simmons. My speculation is Kastor & Co.
Charlie, waynorth waynorth , was kind enough to sell me this one.

Dan, that's an elegant Masterpiece there my friend! I have quite a few more German Knives to bring out-just finding time now lol.

Araothol - just how deep is that Barrel of Knives? you shown shown very nice Knives!

Hickory matey - its great to get a nice Fixed Blade going on the Kitchen that isn't a Wallmart $2 special which a lot of people seem to have, I have two racks of Great Vinatge Knives- English, American - and a chosen few Moderns

This is one of my best finds.

They always overprice the Paula dean and Rachel ray branded junk, and stuff like this passes under the radar because they don't know anything about quality cutlery.

Along side English knives, I have a strong penchant for German-made cutlery.
Along with good steel and quality craftsmanship, old German stag could certainly rival that of Sheffield.
Here is one example from an old German cutlery company, D. Peres from around 1900.
The ring on the back side of the bolster is attached to a back lock which is pulled to release and close the blade from a locked position.

I hope that the German contributors to the Forum are safe & sound as over 180 people have lost their lives in catastrophic flooding mainly in Germany but also Austria, Czech and Belgium over the past couple of days.

Mike Robuck Mike Robuck also has some choice examples of German Stag that underline herder's point about the finesse of Stag on old German pieces.
