what is the deer analogue of a whole fryer?
 
Just use kitchen shears. You know, the heavy-duty ones that you can get at walmart, or any kitchen store. For under $10. I don't even bother with knives for rabbits, chickens, guniea fowl, or anything else that size. Ok, I use a machete to chop the heads off of the birds, but that is it. The shears can cut through ribs and other bones, and for getting the insides out, well, with rabbits you just give them a shake after you open them, and things kind of fall out all on their own. Chickens and other birds take a bit more "hands-on" kind of work, but not much. You are yanking things out with your fingers more than cutting things up. Besides, with the shears, you are much less likely to get yourself, which may be a good thing judging from how much trouble it was giving you...

REALLY. well, take up hunting (go far from everybody/get lost even, just be alone, hunting) it's amazing. then learn to use a bow. you will clean deer and first cut is around the anus. a Schrade USA 152 Sharpfinger does a deer really well. roland

There's a big difference between removing the asshole and cleaning "through the asshole." :D

You're right that a thinner knife makes that cut easier. I prefer a Buck 110 or a Busse Leaner Meaner shaped blade for that particular task.

Nishnabotna, I was just giving you some grief, mainly because of your wording. No offense intended.

Also, welcome to Bladeforums. These responses are all in jest (I hope). Stick around and you'll get some more serious responses.

Seems to me a short boning/fillet knife like a 6" Dexter Russell would fit what you want.

Dexter Russells have high carbon steel and hold an edge very well. Many commercial fishermen depend on them daily.

I have several that I use for fishing knives, and I think highly of them.

How about a fifteen dollar Rapala fillet knife from Wal Mart.

That'd work fine, I bet. The Dexter Russells are about the same price, but the Rapalas would be easier to find locally.

Rapala fillet knives are made by Marttiini of Finland and are really very good knives. I prefer the ones with the black rubber comfort (non-slip) grip over the more traditional wooden handles.

I too, hope you weren't put off by our sense of humor. Sometimes it's kinda like being in seventh grade around here, but I thought junior high was fun also!

There are a lot of VERY knowledgeable people in here, but unfortunately I'm not one of them. However the ones that CAN help you, WILL. (sometimes MORE than is helpful!)

As far as "probing chickens" goes, at present I really can't give it a recommendation. But in the future, if there's any still hangin around the Pub at closing time, what the hell . . . . I'll give it a try!! :D

jokes aside, one must remember to glove up when probing. Chickens are know to transmit nasties to you. ;)
 
Guyon: v. nice knives ! me too, with about 200 knives designed for hunting, i can get hung up before i go out, deciding and changing my mind, which one to take with me. i'm gunna die before i get to try them all, and i still buy more. (Dozier Whittler is another good fer huntin'; i prefer small knives)
