I roast beef bones a while then simmer them into a broth base. We use that for drinking or as a base for other meals. For pho I then add in various spices and whatnot. I’ve got a recipe written down but I cook by feel so it’s always a bit different.

Ask this guy; a buddy of mine from high school. He’s the hunting editor for Firearms News. He took this 800 pounder with the (I believe) .44 mag pictured. If I recall correctly, he told me he was tracking an Elk, came down a bank to a stream to find this thing charging him. Pretty much landed at his feet. He’s been writing, on the side for years but was a professional bad ass in his previous career.
I hope I'm never in that situation. I love hunting for meat and respect the beautiful animals I've been blessed to harvest. I would hate to be forced put down a beautiful animal like a grizzly to protect myself. Plus, you know, the whole being torn to shreds thing....

I've never eaten bear, so I have no idea if I would be able to stomach it. I've heard it's good, but lots of "people" love tomatoes....bleh.

Looks perfect to me!

Somehow, in my last batch of broth, I added one too many star anise to the pot. You wouldn't think an extra one would make much difference, but I learned my lesson.

I love stewed tomatoes with my bear meat.

With some carrots, celery, mushrooms, corn and potatoes. Smoked paprika, more salt than seems prudent and some minced habanero. Cook that with garlic and onions for a few hours and you will probably like bear meat.

Ja, ghoulash sounds kinda like ghoulish.
