I don't have any made up at the moment, but can make you one special if you don't mind waiting a month or two for it. I have a bunch of orders I'm committed to at the moment is why the wait is that long.
By my best guage in the shop.........my eye. LOL Really tho, I do sharpen by eye, but the angle on small knives like these is steep. Small knives are for slicing chores. On choppers I usually broaden it up a little so the edge will withstand chopping chores better.
