I will be getting the Higo II zdp189 for Christmas. I have always been drawn to this blade steelonthis knife- it speaks Japanese sword to me. I am not a heavy user on my knives but I am concerned about chipping after reading here. Usually open boxes, envelopes, cut plastic straps on shipping boxes,etc. Is there anything I need to avoid to not get chipping? For example If I hand it to my wife to cut food on a wooden chopping block will that cause chipping?
Any advise on what not to do is appreciated
