S30V and S35VN perform well for me and retain the ability to sharpen without a lifetime commitment to the task. That's one of my criteria for buying a knife. I guess it was new stuff in 2003 but today it's pretty common. It also seems makers are making knives less brittle these days. I can recall S30V being fairly easy to chip a few years back.
