In order, I like 3, 1, then 2. 2 reminds me of highway signs.

If I wanted a simple shield for a working man’s knife, I’d use # 1, but eliminate the upper scallops. A straight top line would come close to the “heater” shields that many medieval knights actually carried. I love the severe elegance of that shape.
