Pal was/is unquestionably a great knife.
Why rehandle? You cannot get asymetrical jigged bone like that anymore.
"Cleaned up"? I don't see any rust. The patina is protecting the blades.
At most washing the covers and joints with warm water and DAWN™ dish soap using a old toothbrush, drying & lubing the joints is all I would do.

Handles are hard plastic. I was thinking about having jigged bone put on.
