Bosse's thread made me think of how versatile a slim stockman is. This is a 3 9/16" length I used for cleaning some ripe jalapeños earlier this week.

Turkish clip to top the stems

Good sharp tip for trimming out veins and seeds.

A sharp sheepsfoot perfect for cutting matchsticks

Had to bring out the big boy for a final chop.

Hot and sweet! At this point, very important not to touch certain body parts.

I was gonna say that's one sweet knife, Hal, but maybe peppery might be more apt!:cool:

nice pics

are there any current production slim stockmans?

Looks like you keep your blades sharp.

What's your secret? :D

When you get them dull again, send them back. By then, I'll have the Hand American 1 micron spray in and will try to get them even sharper.

That is a fine looking slim, low-profile stockman.

That would also apply to the use of Tiger Balm on sore muscles. Don't ask me how I know. :(

I would recommend the Case Amber Bone 6318 in CV. It's not quite as slim, though.

What's your secret? :D
I got that Alabama edge...

I don't know what you are getting ready to cook but you don't have nearly enough japalenos. :D

Gorgeous! I'm starting to come back over to stockmen myself. I really am all over the place with patterns. I'll never decide at this rate, there are just too many to love.

I'm not a huge fan of Case's 18 pattern, though I know tons of other folks are. I don't like the super-rounded bolsters. The 032 is a better pattern for me- and it is nice and slim.

Case makes a ton of different "medium stockmen":
18
032
90
087
47
44
046 (humpback)

And those are just current or recent production that I'm aware of. I'm sure there are more. I wonder which of these would be considered "slim stockmen"? The synthetic handles are probably the thinnest. It will take me a while to get examples of each pattern. I only have a few 18's, and an 032 at the moment.

Edit: I was just browsing around on Moore Maker's site, and found this pretty thing:

It's a good looking knife, I don't know anything about it. Looks pretty slim though. ;)

I have been eyeing that one, as well. Unless I am mistaken, that stockman is made by Utica for Moore Maker.

Well, that looks fine for the women and children.
Now, get out the Habañeros and make something with a kick!

Ah yes, a lesson learned the hard way. That was the fastest I ever ran from the kitchen to the shower, while ripping off my clothes!

And, you don't want that stuff in your eyes either!

For those who asked, the peppers were put in the freezer for later, the plants just needed picking. Probably another batch of salsa though eventually, but they might go in some chili.

Dr Bill, I made some sweet relish once with Habaneros, and a friend spent the night in a cool swimming pool, mumbling something about passing battery acid. Those are definitely for the pros.

Or your nose:D

That'll learn you kitchen hygiene:eek:

That bolsterless/shadow Stockman from MM is a tasty yellow pepper:thumbup:
Very nice and unusual knife.

I just cut up my burger with my MooreMaker because we didn't have any clean knives. The blade is blue now.
