For me, it is VG 1. I can get my old Voyagers extremely sharp on the Spyderco SM. Oddly enough, AUS8 is the toughest steel for me get the same results. S30V is no problem either.
vg-10 and s30v have given me equal in the edge department. The s30v lasts longer. The vg-10 is easier to get there. Aus-8 bums me out. Tenacious 8cr13mov beats out kershaw clash. .02 is all.
K390 and M390. I've been around knives and sharpening for a long time, and I can get these two steels sharp enough to be "worrisome". In the kitchen, my K390 Mule can push-cut encased summer sausage and raw steak literally like butter.
I can get my S30V and 154CM freaky sharp, but they can't hold it for long.
zdp 189 ( as previously mentioned) closely followed by vg-10. i no longer have much problem in keeping those two sharp. strange as it may seem, it's s30v that's giving me a problem at the moment. i use the same media for all three but s30v won't polish. it stays scratchy and toothy. it's also hard to put a hair-splitter on it. the only thing i noticed is it gets sharp after a lot of light stropping on plain leather.
ZDP-189, S30V, and VG-10, in that order. I've the most experience with Spyderco's S30V, and I can put a mirror edge on it with minimal effort now.The ZDP is still a bit toothy, but it's scary sharp.
Well I really don't know most of these steels that are mentioned. I think all of you are much smarter and have more knowledge than myself. The knife steel that gave me the sharpest edge is the old Schrade Steel. I believe it is 1095 but I could be wrong.
Buck vantage avid, I think its 13c26, I like sharp, all my knives are sharp, but I sharpened one for my cousin and it is ridiculous the edge that knife took, I never matched it with 154cm, I came close with vg10, but between blade shape and steel, that cheap buck holds the crown for me
The sharpest I've gotten lately is H1, face shaving sharp. Before that, I repaired and sharpened an old knife in 12C27 years ago. It was extremely sharp after next to no effort. No strop, no tricks, no special effort. M2 high speed steel was also very easy to sharpen to a high sharpness. Lowering the bevel angle was the tough part.
Contrary to other posts, 1095 seems to dull in my pocket, maybe due to oxidation of the edge or something from warmth and humidity in the pocket, but I'm ready to give up on 1095.
