So which knife steel gave you the sharpest edge?

CPM M4, ZDP-189, D2, S30V, Sandvik 14C28N, 154cm.

The two knives I can get sharpest with my equipment are my Sandvik Skyline and my 5160 Fallen Oak Forge. Seems like just a couple passes and they're back to scalpel status.

I get everything from 8Cr13MoV to M390 hair whittling sharp, but the best I've ever had was with my Mora in carbon steel. Just once, I got it to do a hanging hair test. Still working on getting it consistently.

I have a really thin convex Zubeng tamahagane blade that is scary sharp, hard yet a little flexy, and will shave tomato skin, a light leather strop is all I've ever needed to do to it to keep it 'stupid' sharp. I rarely use it for anything but sushi anymore because it gives so little resistance to the item being cut that it has very little 'feel'.
