So which knife steel gave you the sharpest edge?

My sharpest would be BM 154cm, Spyderco VG-10, and Junglee ATS-34. Special mention to CRKT 8Cr13MoV, but it only got so sharp because it is set at under 20° inclusive.
 
I seem to get a great edge on most steels. S30v, s35vn, vg10, d2, Aus8, 8cr13mov, 1095, 420hc, 440c, 440a, and elmax. The only ones I have had issues with is aus6, 420j2 , and 3cr13mov i do have to be fair and say that it was probably just the ht on them that made it impossible for me to get a shaving edge with...
 
Don't have much experience with high end steels. I have Aus8 440A and 1095. I can get the 1095 very sharp. Haven't sharpened the Aus8 blades much yet so I'm still learning haha.
 
my skill level in sharpening, as well as my equipment, is sub par. the sharpness level isn't much different from steel to steel for me, whether it's cpm m4, cpm s30v, vg10, or the opinel (1074?) they all get generally to arm shaving sharp, but not face shaving sharp. the opinel gets there so much quicker though. it might also average it being a hair sharper if I stop before the more wear resistant steels are at their full potential I can reach.
 
Doi yanagi in white steel, it would pass a hanging hair test right off the stone. Very impressive and scary sharp edge on a 300mm knife.
 
A kershaw skyline out of the box managed to take a small chunk off of my finger without me feeling it. Think it was a 13c27 model

I think its the combination of the thin blade and very clean fine grained steel that make the Skyline so sharp with so little effort.
 
I haven't really had any problem with any of them but I will say that SR101 takes a mean edge.
 
I don't carry it with me, but my white steel kitchen knife is by far the sharpest I've gotten a knife. Other than that I guess the sharpest I have are a 12c27 neck knife and a carbon steel Mora. Then there's zdp and the rest. I have an M4 knife which I put a nice, thin edge on, but I haven't really compared it to the others yet.
 
Used a lot of steels, Sr101 holds its edge the best, and can get scary sharp.

But the sharpest edge i have been able to get was on a little neck knife made of 440A SS... However it would go dull a lot faster than any SR101 i own.
 
sorry it took me so long to respond. and yes you got it right. its just like whittling a log. except it is a piece of hair.
 
So far i had best results with O1, A2, White Paper Steel, K390and with stainless 19C27, VG10, ZDP-189, M390
 
I have knives with vg10, infi, s30v, duratech 20cv, s35vn, 154cm, aus 8, m4, 1095 and sr101. The steels that get the sharpest for me are aus 8 (onrtario rat1), 1095 (esee izula), and sr101 (swamp rat ratmandu) with a v-edge. 1095 is the most enjoyable to sharpen for me because of how easy it is to get a mirror finish.

Ok so the sharpest edge (for me) would depend on the grind..... I E chisel, hollow grind, flat grind (full or otherwise). If you have multiple sharpening systems at your disposal and you've had years of practice, you can get most any decent steel scalpel sharp. For me the big question was, can they stay sharp just sitting in storage?

I find that anything ZDP - 189 will stay just as sharp a year after I've sharpened it (without use and in storage that is)

Now to answer the O P's question. ZDP -189 on a hollow grind is probably the sharpest I've ever had any steel get. I usually push cut across phone book paper or something thin like that.... Shaving hair is ok but I prefer to see just how much drag the blade edge actually has while performing.
