AEB-L is a great choice of steel for a kitchen knife. I have no doubt it will provide many years of service and a big smile for your mom every time she uses it.

Ideal steel at 62/63 RC for that use. I’ve made several hundred kitchen knives from AEB-L. I remember one lady after her first use saying that it was so sharp that the onions were crying! One of the great strengths of this steel for this job is its ease of touch up. Why I use it on my own leather knives too.Beautiful job!

Thanks..it seems really nice. I bought the AEB-L and all the stuff to do ss heat treat last summer but just finally got around to using it. I really like the way it took and holds an edge. I want to get the spring ht figured out and maybe do a few slipjoints in it.
