Won't tell you how to run it, but the smoothest ones I've seen have all assigned numbers to people in order of their ticket purchase (including blocks of numbers for multiple-ticket purchases), finalized and published the ticket list prior to draw, and then drew with random.org on livestream. People do it mainly for transparency and so the participants get a chance to verify that they have the right number of tickets that they paid for.
