The Scrapmuk is absolutely my wifs favorite knife in the kitchen ... For everything!!!!!
Meat is fine, but I cringe when I see her chopping veggies with it. I'm surprised it hasn't bit her yet and I have a perfectly fine veg cleaver that is so thin and SO sharp.
Uncoated SR-101 would be fine, or even D2 if they still have some left around, as long as it's ~.12-.14 so it will really slice. My carbon knives all have nice patinas.
The Scrapmuk is a bit thick, but I love the mudder grips and I'm sure the HogMuk is thicker yet.
I wouldn't want this to complete a set, but be a working knife, a slicer for food prep.
