As to the knife question, I would start with a Buck 110 and when you find things that it can not do, continue the search with a specific set of parameters.

There are tons of knives that would survive much harder use than most owners would ever subject them to, yet are not recommended around here when this question is poised. Ironically, some of the most recommended "hard use" folders (mostly #1, but also #2 above) rarely get used that way simply because people can't bring themselves to do that to their $250-$500 knife.

Luckily my wife uses her knives.
Last night I had to clean the blade of her Benchmade 707 Sequel with some acetone to get all the grime and gunk off it...I said "Looks like you sure have been using it."
She replied "Of course I use it! Why would I carry a knife and not use it?"
