The Sharpest knife you ever encounter

i just cleaned up a 50+ year old folder for my girlfrend's dad - the blade just says "japan" and it's got a pair of high carbon blades. I cleaned off the blade with sandpaper (500 grit only) and stropped the edge and i'll be damned if it doesn't split hairs dropped on it while it's edge-up on the table. It's a thin blade and a flat grind so I wouldn't expect it to hold up, but I had to strop it when I noticed how sharp it was despite sitting in a toolbox wrapped in an oily rag for the better part of 20-30 years.

Ankerson: Can your knives slice 1-ply toilet paper like the crappy kind you see in public bathrooms?

A buddy had one of Scrap Yard's test team Regulators IIRC. It had been touched up on a sharpmaker but I've never seen hair run from an edge like that before. I guess it was SR-77 steel.

I'm serious...this thing is sharp...i get anxiety attacks everytime I use it....It gave me a DEEP cut one time :(

my buck 279T...it is crazy sharp and stays that way a long time! pops hairs with no force.

My Kershaw JYDII COmposite was hair whittling sharp out of box and still shaves pretty well.

Yeah, it's easier to cut than the stuff I used in the video as in it doesn't tear as easy.

OK, to be on track with the topic.... I found my Spyderco Delica, when new, to be scary sharp. I was seriously astounded at how sharp it was - hair-splitting sharp. My old Buck 110 was also very, very sharp but not to the level of my Delica.

OK, so I just tried the TP cutting test on my re-honed Buck Paklite Skinner and yep, it slices the tp. The blade is short so i have to use two passes, but it's sorta there (it doesn't tear the paper).

I believe jankersons are sharper, but i'm no expert and don't have anything fancy - 2 hardware store stones and thats it. I gotta learn how to do this stropping thing one day or get one of those nifty guide things.

Strange thing is that i have a knife a friend of my dads gave me for graduating high school. Now THAT knife is freakin' sharp. It's in the States right now in my storage (i'm not in the States) so i can't compare it, but i'd bet it could carve TP.

Sharpest knife for me was my Spyderco Caly3 ZDP. I've had quite a few Spyderco's and a couple of Bark Rivers, but that knife was by far the sharpest. With the Caly3, I didn't even notice a tiny cut on my finger until I washed my hands hours later and the 1/4" cut reopened.

For whatever reason I lack the manly gene that allows me to be able to sharpen a knife (can barely get an edge on a sharpmaker, even!), but the sharpest factory knife I have ever had is probably my Endura. The uber-sharpness wore off pretty quick, but it held a pretty good edge for quite some time.

Email to Ankerson sent, because I want my knife(s) to do that, particularly my two little Case mini-trappers and my Endura.

Ankerson-

I'd love to see what you could do with my Murray Carter...

I sharpen freehand, and I am pretty good, but it appears that you have a different level of understanding when it comes to what makes a knife sharp, edge geometry, metallurgy, etc.

Of all the knives I own, I can get my Murray Carter the sharpest. It takes the keenest edge of any of the knives in my possession. I can get it hair popping, hair whittling sharp, and I feel like I am just a few steps away from getting an edge Captain Insano sharp like you can.

If I can do that and feel that my skills have yet to improve, I could only imagine what you could do with it. Murray Carter's knives are the sharpest I've seen.

Yeah they can get very sharp from what I have seen. :)

dont lugh...but my opinels are so sharp i sliced alost a half inch into the right side of my palm and i didnt realize it...until i saw the puddle of blood

Sharpest knife out the box was a Helle Folkekniven. Hair whittling sharp, polished edge for $45! Sharper than any of my Spydies, Kershaw........

Sharpest now is my No8 Opinel. That thin, convex grind is amazing after a good stropping. Close competition comes from my Mora clipper.
