Yes. It is bone. That one is sawcut bone?
Very nice. I’ll have to look into those.Yes. It is bone.
All the "OTB" have bone covers. The "B" stands for bone.
The OTB knives also have 9CR18MoV blades. Supposedly "440C" eqivalent.
(Tho a web search today said it is VG10 equivalent, in edge retention and corrosion resistance as well.)
I bought it because I wanted a 440C large stockman.

No. The Case x375 is only 4 1/4 inches closed.Took a look at those 858s, are they the same size as a case large stockman?
Very nice collection! The Tuna Valley line of knives nearly always use 154CM stainless steel blade/springs. (there were a few GEC made ones that used 440c steel, and a few specialty ones with Damascus steel blades). These are most of my burnt stag variations from 2009-2024. I'll need to get an updated photo sometime that includes some others.

Is that a choke tool?I'm guessing this old Remington is stainless, because it's been riding in the pocket of my hunting vest for about 25 years, and there isn't a spot on it.

Yeah. Choke tool/screwdriver/pry bar. I've never used it, because all my shotguns with interchangable chokes came with their own dedicated tools. Is that a choke tool?
