EVERYTHING I do is entirely by hand. I have no jigs or fixtures. Even my sharpening is done by hand and eye so to tell you what angle it is would be impossible. That may sound irresponsible business wise. But, I have never made a knife to impress anybody but myself, and I know how I like my edge and I have done hundreds of them. Every knife customer is different as far how they like there edge, and for me to get hung up on specific angles of everyones liking is something I simply do not have time for. So, the edges go out the door to my liking. Honestly, I have only had one complaint about my edge to date and he reworked it on a Lansky to his specifics and he was happy then.


Completely understandable. When I sharpen on stones, I work it until it "feels" right. Consistency seems to work better then uncomfortably trying to hold a specific angle.

Went to Golden Corral today after my shift for breakfast. They've stepped it up a bit, bacon was pretty good. Actually holds it's shape, not that thin flimsy bacon paper some places have. They even had chicken-fried bacon and "bacon candy" which is candied bacon chunks. Pretty good breakfast for a buffet.
I'd try both of those. I'm not too sure how good it'd be, but I'd try it.

I made french toast bread pudding for breakfast.
 
Its all good WW. If you want one of those mini hawks that bad I will definately hook you up with one if not the one I posted. I dont expect it will sell its just something to lay around and look at. The ones I do in the future im going to put a small ring on the bottom of it so you can put it on a keychain. The one you saw doesnt have that. As far as price, ive never really priced one, ive made several of them and the mini cleavers but Ive never sold one ive just givin them away to friends. Murphs Mom has the coolest one I ever did. It is a mini meet cleaver with stag handles and fileworked. Murph claims she still carries it on her keys today. Anyway, back to the topic, I make em out of scrap materials, so if for some reason the one doesnt make it back from blade, I will put one together for you and we will figure out the details then.


Sounds great to me bud, i do want one for sure (yes that bad :D ), so just let me know when the time comes, I really appreciate it!!
 
Does mail come on Sunday for anyone else?

I guess its not everywhere but in some locations the river store teamed up with USPS to get prime orders delivered on sunday too, no additional charge, im wondering how they even make money on some of the smaller items.

I got a few boxes in just now and was confused as hell when the mailman knocked on the door.....

It could have been better but it was alright. The fried bacon was pretty dry, I didn't like the bacon candy because it was in chunks. Ever eat a cube of bacon fat? it's ot as good as it sounds. I've had regular candied bacon and it was awesome.

I do my edges the same way. Glad I'm not the only one. :)

As long as the edge performs well in most cases i could care less about what angle its at.

Now for my 2 handed chopper, whenever it gets made, im going to be a little more picky about certain things like thickness behind the edge and primary angles, which will be important to me to get it to perform and bite down how im wanting.. The design itself is influenced a lot by Dan, the blade itself is almost the same as one of his designs (Yes he knows) so ill be talking with him about the specific edge thicknesses and angles before its ever made.

WHOA DUDE! I was doing MY fair share! I was covering for Erik too since he has been busy!

I won't make the T-Shirts, but how about breakfast? I can make that

Is that over baked french toast?
Sorta... I was going to bake the pieces individually but I decided to make it into a bread pudding, adding 2 extra eggs to the mixture and some more vanilla then baked it off in a casserole dish. I should have added raisins but I hadn't had them soaking like I prefer. I call it a french toast bread pudding.

Gotcha. My wife makes baked French toast on occasion. It's really good.

raisins are amazing. they can ruin any dish. I think you did it just right!
there's nothing like biting into something lovely and experiencing the sickly sweet pop/squish of a cooked bug. or raisin.
