Traditional French Fry day

Wonderful knives. Are the covers boxwood?
No, it looks very similar, but it isn‘t. The upper one is made from Wild Service Tree Sorbus Torminalis, the second from Service Tree Sorbus Domestica.
Both woods can only be differentiated when analyzed under an electron microscope. Hence, in German speaking countries, they are referenced by carpenters as Schweizer Birnbaum, Swiss Pear. The wood from the trees stems from forests I manage. The Service Tree is the rarest of the European trees and my absolute favorite. It’s the hardest wood from European trees, not as hard as boxwood but the boxwood is classified as a shrub, so not counting as a real tree.

Out of curiosity, how does the shrub boxwood compare to the shrub blackthorn, insofar as hardness and durability are concerned?

I know my Scotts-Irish ancestors (and any extended family still there) used/use blackthorn for their Shellelagh fighting/walking sticks.
(I "need" to get a genuine from Ireland blackthorn Shellelagh walking/fighting cane ... shame they so daRn expensive. ☹️ )

It’s quite hard, but not as hard as boxwood. On the other side it’s much more flexible, so as a walking or fighting stick it’s better suited then boxwood IMHO.
 
Christmas is long gone, but still...... a 12cm by David Dauvillaire, scales are elforyn.

I'm only half-joking. More attention is paid to cover materials, and rightly so, but at least for laguioles I enjoy the blade stamps nearly as much. That's mostly the reason why I want an FDL knife, despite their dearth of carbon steel shadows. FDL has a beautiful stamp.

Maybe one day after I get knives from Latreille, Rozelier, Mike & Steph.
