Those were called "String Cutters". Fighting roosters had sharpened metal spurs attached before the fight over their natural spurs, so after a fight the owners would slide that tool along the leg of the rooster to cut off the metal one, which was usually held on with string or cord of some type.

In a million years, I never would have guessed that one.
