and if it has started fermenting, add some instant tea (tannic acid source) and wine yeast to help it along -- maple wine!
You could make cedar or mesquite sap wine.![]()
One could TRY to make wine out of those saps. :barf: I personally would not want to waste good yeast or sugar on either of those saps.
