While I agree that people do complain about chipping and rolling, sometimes I feel like this is less about the hardness and more about a burned edge.
Indeed. No matter the company, don't judge a production knife by its factory edge. That's why the testing I mentioned earlier usually starts at like the fourth edge and runs a verification edge. Aside from trying to standardize edge angle (KME) and finishing grit for comparison, it helps to minimize the deleterious effects of factory grinding. Another thing that could be its own show is tracking how edge retention improves from the factory edge, how deep that effect can run, and how that curve can stretch.
If I recall correctly, there was a Benchmade that was continuing to improve after the tenth edge!
