How about some stabilized holly? I've always been wanting to try something like it. Not sure if it would be a popular choice though.
I will probably try stabilizing some Holly. I am pretty sure it will take on an amber hue though. Like old ivory.
Several of you mentioned olive burl. We use it for furniture here but it has more checks and voids than Ironwood.
As for the fiddleback mahogany, I have been looking for more like the one Nick used but no luck for the tight curl so far.
Figured Bubinga is one I like as well. Someone I know has a really good billet that I have been trying to get.
Macadamia is in the works so probably pretty soon.
I do have some ebony getting stabilized right now.
I haven't been able to find a good source for Black Ash burl. We get Oregon Ash burl here sometimes. So I will watch for more.
As for figured Cocobolo, one of the forum members in Nicaragua mentioned that there is a Cocobolo mill near him. I will have to talk with him.
 
Mark,When I lived in Hawaii, we had a big, old, kukui (Aleurites moluccana) in the back yard. The nuts polished up to a nice dark brown. I didn't find any burl, but a piece deadfall seemed to have some interesting grain. You might talk to your Hawaiian sourcesabout it.

edit to add amboyna how couldi forget nice red amboyna with golden ssap wood (sold like hotcakes for me )

My first thought was Black Ash Burl as well. Like some others have mentioned I have been watching for some Holly and Olive Wood as well.
I do not buy a lot of wood, but those are the 3 I am most interested in getting that I do not find readily available.
 
There's always the unicorn... Alaskan Yellow Cedar Burl.
I have been trying to find that for a few years now. I know a guy who makes high end flutes who had some.
He said it worked out to about $200 each for flute blanks (equal to about 3 knife handle blocks).
Even with the cost he said years can go by before he sees any of it again.
 
Camatillo rosewood. I have a kitchen knife from Dave Loukides in the stuff and it is absolutely gorgeous. I figure if you carry it, someone I know might buy it, and it can make its way onto the next knife I buy...
 
I had a piece of Mai Puay Phut a while back that was stunning. I think it's a crepe myrtle variant from Laos, and I'd love to get more. Otherwise, really black African Blackwood and (though I know you said no Australian stuff) Red Mallee Burl. It's my favorite wood to date- super hard, a pleasure to work, and simply stunning.
 
I loved the Black dyed and spalted Sycamore and the Cascara I have from you.
I am pretty sure I have used up all of my good spalted Sycamore, but I have more of the Cascara that I will be cutting up soon.
The silky oak that I am getting is a lot like the sycamore. Same sort of flecks but different coloring and a lot more flash.
 
Besides the stuff mentioned, I would like to find some more kamphor rosewood. I had gotten a few pieces a while back and they polish up into the deepest reds. It had a real nice depth to it and looked amazing. Have not been able to find it since though. Not even sure if thats the proper name for it.
 
I love the way juniper burl looks. I think I've seen beautiful examples of just about every fruit and nut tree there is. The almond I saw was really nice.
 
Rowan burl. Can't find it anywhere. I've asked a guy in Northern Ireland to keep a look out for me, but nothing as of yet. I would pay a good amount for it, but I don't need much.

Interesting. A good friend sent me some exotics today. I've never heard of the stuff, but I reckon it wasn't cheap.
