So do any of you have this experience. A knife sharpened with a 400 grit finish feels sharper like toothier but a 1000 grit knife doesn't feel as sharp until you check the edge with the pad a your thumb? I'm assuming the 400 grit edge feels sharper because of the micro serrations?
Ok I have had about three hours worth of time touching my knives up freehand on the Sharpmaker stones. I am happy when I have the knife sharp enough to push cut receipt paper, or shave arm hair without effort. But I know some can get knives insanely sharp, so is my standard of sharpness pretty low on the spectrum?
I like my knives so sharp that you don't know you're cut you until you see the blood dripping from a cut.
if it cuts you when you look at it. :d

I can do amazing things with a simple Lansky diamond pro system fro amazon.com. I reprofile with the best of them with this simple little system. Widdle hair with a Strider SMF.

I like a 30 deg edge that will push cut phone book pages without bending or tearing them. I fold about 1/8 of an inch along one edge so that it stands up by itself. If I can push cut down through the part that's standing up without bending it or folding it, I'm happy with that edge.
