What is a sharp knife to you?

Boy. what is the learning curve on the edge pro?

It's easy mode.

So do any of you have this experience. A knife sharpened with a 400 grit finish feels sharper like toothier but a 1000 grit knife doesn't feel as sharp until you check the edge with the pad a your thumb? I'm assuming the 400 grit edge feels sharper because of the micro serrations?
 
I cheat. Since I have the equipment I use a leather belt on a belt grinder. Load the belt with rouge and you have a mirror polished edge in no time. Im pretty good hand sharpening but since I got the equipment Ive goten lazy I guess..
I plan on buying s sharp maker to keep in the house since I have so many recurve bladed folders now..Ill still probably finish it with the leather belt though..Its just do effective and fast..

I would say that it's just a more aggressive edge but it's not any sharper. With experience, you will be able to feel the sharpness taking into account the finish.
 
Ok I have had about three hours worth of time touching my knives up freehand on the Sharpmaker stones. I am happy when I have the knife sharp enough to push cut receipt paper, or shave arm hair without effort. But I know some can get knives insanely sharp, so is my standard of sharpness pretty low on the spectrum?

For me, it depends on what I want the knife I'm sharpening to do. A small pocket folder is mostly a slicer for me, so I like a 30 deg edge that will push cut phone book pages without bending or tearing them. I fold about 1/8 of an inch along one edge so that it stands up by itself. If I can push cut down through the part that's standing up without bending it or folding it, I'm happy with that edge.

For one of my FB or a larger folder, I still aim for that but with a bit more obtuse edge angle since they get used a bit harder. I use the 40 deg Sharpmaker slots for these blades. All my knives shave me, all along the blade. Shaving sharp is a starting point for me, not a goal.

Once I'm through with the U/F Sharpmaker rods, I usually strop the edges a bit. When I'm finished, they cut fine for me so that's all I'm interested in with them. I'm strictly a user. When the knife works well enough to satisfy my needs, I'm through with it.
 
I like my knives so sharp that you don't know you're cut until you see the blood dripping from a cut.

I can't touch that edge sharpness yet. I can get the spyderco tenacious to push cut news paper and shave curls off of printer paper without cutting all the way through the other side.
 
my test is push cutting newspaper against the grain and all of my knives can do this.

I am way out there in this world, but, for me, kinda sharp is fine. for example, if it can shave hair, that is more than fine. as long as it does not become annoying to cut things, i have other things that i use to shave with, and so i could be spending my time other places. however, seeing those edge pro pictures is really tempting....
 
I can do amazing things with a simple Lansky diamond pro system fro amazon.com. I reprofile with the best of them with this simple little system. Widdle hair with a Strider SMF.

My standards have been raised in how sharp a knife can get with my latest David Mosier custom flipper. David put a edge on this knife that is beyond sharp.

Id guess maybe shaving beard comfortably? Shaving arm hair is one thing, shaving a beard is all together different..

I'm a noob here, so I don't understand what you're saying here. Can anybody explain, or point me in a direction where I can learn about this?

I can tell if it's sharp enough for me by the bite when drug across a fingernail. It usually corresponds to shaving arm hair. An old friend taught me to test the sharpness of my broadheads this way, saying it was unethical to use anything less. I have used that as a guide ever since for broadheads, blades, axes, machetes, chisels, etc. I am obsessed with keeping my tools sharp. I have a couple of chain saw chains that are downright scary :)
 
Aside from my junk experimental knives...Frost Cutlery types, etc...all of my usable blades will slice toilet tissue cleanly or I work on them until they can.
