What is the sharpest knife you own?

I have a lot of knives that cost more, and are very sharp, but this one beats them all for scalpal like edge.

It is sharp as Helle!

The Helle Odel in laminated stainless with birch, reindeer antler, and leather spacers.

My sharpening system is usually EdgePro, Sharpmaker, and an old Russian leather and canvas barber's strop. On occasion, I use a DMT diamond benchstone or Arkansas stones.

I can not answer this question. All my customs ARE very, very sharp.

Delica ZDP. I'm now awaiting my Endura ZDP. hopefully, it'll be the same.

for customs....I believe Jim Burke and Emerson zero grinds are my sharpest.
