Good question about folding knives. Cpl Punishment brought up the point of legality. There are many different laws about knives and open and concealed carry, both for fixed-blades and folders. These laws vary widely, depending on what government jurisdiction one is in.
Since a folding knife is about half the size of a fixed-blade knife of the same blade length, it's much more compact and convenient to carry. I'd say this is the main reason for their popularity. Multi-tools are also very popular. Almost all of them have at least one knife blade. Usually folding knives are used very briefly, then put back. I rarely see anyone using them for an extended period of time. In that case, a short fixed-blade knife would be far superior, as you said.
I agree with your assessment of fixed-blade knives and folding knives. I can understand why you'd prefer a fixed-blade knife and have difficulty getting used to a folder after using a fixed-blade. I am starting to get back into learning primitive skills and can see a small fixed-blade knife or two in my future if I am doing a lot of carving and delicate work.
