Probably some degree of porch blasphemy, but I like aging yellow delrin as much as anything made of animal parts.

What did you say the thickness of that was? I've always assumed their kitchen knifes would be thin like their pocket knives.
Not as thick as I thought, but the stiffnes and weight give it a sturdy feel. I measured about 2,75 mm. I would like a knife with similar style but 3+ mm blade, the search continues.
 
Hatchet_Jack Hatchet_Jack Nice of you to say so mate, I do agree :D It's a GEC 82 Dixie Stockman from 2018, large knife 10.5cm/4.25" I like the blade configuration, California Clip lays very low in the well, and Drop-Point and Wharncliffe just:cool: These are around in Tidioute trim in some hard wearing woods, bone and micarta too. Earlier release in 2013 too.

I really didn’t like the gray smudge that had been polished into the bone near the bolster. After many attempts of cleaning the gray smudge, I came to the conclusion that it would never come out. I love dark red dyed bone knives, so I went for it with this one.

Personally I love natural bone, but your dye work is sensational.

I was going to say that these old double-tapered jobs are a good bet, but I see that my favorite Henckels has a single taper, and the stainless Sabatier can't be that old. (The middle one is unmarked, except for the incised v or lambda.)

There's always a steeling concavity to be dealt with. The Henckels came out perfect, the Sabatier I got close enough, and the no-name maybe I should narrow the heel some more before deciding to shorten it. [Maybe just a little more off the heel and then raise the point, which will shorten it to just behind those rust spots.

The Sabatier is 5mm just forward of the bolster.

To think I almost didn't buy that Henckels.
