What "Traditional Knife" are ya totin' today?

What is the small one with the tip bolsters? It looks a lot like the Ulster I have.

It’s an arch stamp Schrade and it does look a lot like yours, the jigging too. Just without a shield. It’s a nice one you have.
 
I, too, have an abundance of knives, but still can't bring myself to use a traditional folder or fixed blade for kitchen duty (except afield). I have too many kitchen knives (and, I mean, too many) for that. But kudos to y'all who do so. (Yes, I'm too tentative.) It's a nice thing to see.

All of my kitchen knives have terrible edges. I just don’t keep them touched up like I should. I have a Case Sod Buster Jr. that handles all of the paring knive jobs in the kitchen and excels at that.
How can I love my pocket knives and ignore the chefs knives? Do others have this issue?

Absolutely! Most of my chef's/kitchen knives are pushing 20 to 25 years old.

I've been planning to get a new Masakage Yuki Gyuto 210mm (for example) for several years now.

Oh Boy! Just got the tracking number for my new Tidioute/Northfield must have/can't live without GEC pocket knife.

I've been using my new *chef's* knife tonight and it's going to church with me in the morning.

It just never ends -- I Might Need Therapy? ;)

Also our younger son who is a very good cook liked the knife a lot. I think when he moves out (again, due to an unfortunate change in lifes circumstances he moved back to our place) I will make him his own. How does a version with ebony handle sound?

Thanks, GT. I find that I have two of those pruners. Gotta get to work outside. The bail of the boy's knife is a recent gift. The mini-trapper (formerly, dog leg jack) is my favorite.

Actually that’s two in my RF pocket.
Four total counting the Wenger Esquire on my spare keys in my LF pocket (backup keys are a habit acquired calling on clients in the west and south sides of Chicago), and the tiny SW Stockman r8shell r8shell gifted me that’s in my guitar pick pocket of my Wranglers. Yeah I have a cool church - they let me lead worship in jeans:D

Kind of. My solution was to get a kitchen knife that I thought was good enough. I use an Old Hickory butcher knife, one is a 7 inch and one is a 10 inch I think. They work great! Much better than the awful knife sets at the store. But most of the time, I just use my pocket knife too.. and speaking of, a case soddie jr is a great choice! I carried one for the last 2 days even though I have nicer knives. It just works.
