Thank you. My work days usually start at 4:30am these days but I have worked pretty much every shift imaginable over the years.

This is the corn cob jigging I think they call it so it has this shield instead of the red one.

Every single time I see this Albaceteña I smile. I love the curves and the symmetry. Jose knows a thing or two about his art.

José is about 60 and has been making knives since he was 13. I have to get some more before he retires!
Incidentally, this knife cuts better than any other I have, and I haven't even sharpened it yet.

I'm glad you told me that. I for some reason figured he was fairly young. It is my intention as well to avail myself of as many as I can... because... OH MY!... he's my age!!!
