What type of bacon?

Thick cut fresh side, otherwise known as uncured bacon, is as good as it gets for me. My local grocer gets his in bulk and packages in house. It has nothing added to it, meaning no sodium or nitrates to screw up the flavor or your health. The taste is really something to behold if you have been eating prepackaged cured bacon all your life. I fry it on medium heat in a cast iron skillet until it gets a light brown crispy layer on the outside, yet remains somewhat soft on the inside.

Gary, what do you mean, "cut it myself"? Have never seen anyone cut their own bacon, I assume I gotta get a cow?

It was about three times thicker a couple weeks ago. I don't know if this is common everywhere, but here in NYC, where we're somewhat far removed from farms, it's tough to find unpackaged, unprepped, unsliced bacon. Gotta go to a pricey specialty store with a charcuterie section or wait for a Greenmarket day.

Thick-sliced. Applewood smoked or Maple cured. Costco usually has some pretty good stuff. Munching on some right now! :D

+1 on Costco applewood smoked bacon. 4lb pack for like 14 bucks. Awwww yeeah!

Having been raised in Germany, I prefer Speck. The stuff is so thick cut we ate it like a steak, with a fork and knife. Sliced bacon was new to me when I moved to the US some 20 odd years ago.

87burb - Oh yeah, will defaintely be looking into that

Oh and to the guy that said that wrights steakhouse bacon is good, a big +1 to that. I had an extra cooked piece I put in the fridge a few days ago and forgot about it. Looked a bit rough today when I found it but said eff it Im not wasting bacon and gobbled it down, good stuff. Seems like the apple stuff gets good praise, that will be my next purchase.

Thanks everyone for the VERY VERY VERY insightful posts, they should serve my fat gut well for many years to come. I LOVE BACON.

With my post, I was actually thinking about that... what if I just roasted or grilled the whole thing? I'd need a big group of people over to help me finish it though. My body's starting to slow down and I need to take it easy :o

I'm loving that! Turkey 101 is my favorite. Rare Breed is the best though...

Wild Turkey makes this awesome honey liqueur called American Honey. You can mix it with anything and it'll taste good, for example, mixed with cream soda for a drink or as a glaze for bacon.

When it comes to bacon, I buy the best I can find. I don't eat it that often, so going for the premium stuff is not a problem.

Lately it has been Hormel "all natural" with no preservatives or nitrates. It doesn't last long after you open the package, so you have to eat a lot in a shorter period of time. :D:thumbup:

Pure bacon-y-goodness.
