What type of bacon?

Thick cut fresh side, otherwise known as uncured bacon, is as good as it gets for me. My local grocer gets his in bulk and packages in house. It has nothing added to it, meaning no sodium or nitrates to screw up the flavor or your health. The taste is really something to behold if you have been eating prepackaged cured bacon all your life. I fry it on medium heat in a cast iron skillet until it gets a light brown crispy layer on the outside, yet remains somewhat soft on the inside.

I eat that as well. But I disagree with you on the taste. I don't think it's as tasty as even the cheap stuff. I eat it though since it's a little bit healthier than the cured bacon. After a while, I forget what good bacon taste like and this stuff taste good to me.
