What's that you're eating?

I am a chili purist, but sometimes I will give in to friend and family requests for a chili flavored stew, and today just felt like the right day for that. Gorgeous fall day, cool and breezy.

Instead of starting with chili peppers like a proper chili, this stew starts with onions and a few other peppers.

For meats, I like to use about a pound of bacon, 3 pounds of ground chuck and a pound or two of tri tip.

Get the vegetables and meats browned and cooked first.

Then add all the other stuff. Tomato sauce, beans, seasonings.

I have the house all to myself. The better half went to see her mother.


Fried pork chop, Gordon Ramsay rice, and a sauce.

The spices on the GR rice, one I had to order online and the other, the Mexican store had it.

The cardamom came from Amazon. Anise star. The Mexican place up the road had that. Anise is what gives black licorice an added flavor. The smell. Have no idea what cardamom is. All I know is pinch the pod and throw it in.
 
Gentlemen, we're going fancy tonight. I pulled out the titanium nitride dinnerware. Yep.

Got my square, deep blue, plate going.

Tonight, we're going to eat a pork chop like a King.


Edit to add, Let's make this a NY strip night. Not a pork chop like a commoner. Beef. Yeah.

After thoughts. Gordon likes the taste of potpourri. His recipes show that.

I think it was him that had a burger place in Las Vegas. After I ate my $30 hamburger. I swore I would have punched the guy at any chance of meeting him.

The anise star and green pod is potpourri tasting rice.

Rich old lady, hobby lobby potpourri.... But in a rice.

Gordon Ramsay is a royal Ahole. Always has been.
 
First cold front of the fall hits, so you know what that means.

Yesterday browning down 6 chicken breasts and ten thighs, 3 lbs of smoked sausage and a few smoked turkey neck pieces.

Boiling up my roux and stock with the chicken fat, skins, and rib trimmings and a couple smoked turkey necks in here too.

Let everything sit in the refrigerator overnight to marry, then cook a big rice and served a steaming hot bowl of Louisiana dirty water gumbo.

Haven’t really been cooking like normal lately. Our little kitty passed in her sleep about a month ago. The wife picked her and hand raised her, spoiled her. She was ten, healthy and active. Her sister is still here, an unhealthy little tuxedo runt that I picked, who is still doing fine.

Anyway. We tried to act normal last weekend. Went out to a local brew pub that we don’t normally go to. I ordered a Reuben and it was genuinely the worst I’ve ever had. Lacking in sauce and so rubbery I’m sure they microwaved it. It made me so mad I went and bought some pastrami and rye this morning to make my own.

Pan-fried with dark rye, turkey pastrami, Swiss cheese, sauerkraut, and home-made special sauce.

Chips are “Dirty” Potato Chips. Fried in peanut oil among others. They taste more like Tim’s than Tim’s do these days.

I am so sorry for the loss of your kitty. Life goes on, but the void remains and really really sucks 😢

came home from my ride today with a handful of lil puffballs. Fried in butter with sriracha and pepper, cheese melted over top, flipped onto a piece of toast with a sneaky pastrami in between
