What's that you're eating?

Decided recently that I'm going to bake my own bread instead of buying expensive loaves at the store. First loaf turned out pretty good.

Have since got a starter going and am excited for fresh sourdough.

Lol. It's ugly but I'll try. I kinda combined the recipe on the sourdough starter packet (wanted a test run at a loaf to get my feet wet before and also my starter wasn't ready) and a friend's advice. Also, didn't have enough bread flour so used AP for the remainder.

The recipe only called for one session of folding whereas my buddy and other online things suggested 3-4 while waiting half an hour between each session and stopping when it seemed to have a nice, reasonably smooth and even texture. I began late in the day so by the time folding was done it was 9:00 and decided to let it rest covered in the fridge overnight. Took it out about 16 hours later for the final rise (1 hour). Here's the rest of it... this I followed. 😁

  • When dough has 30 minutes left to rise, place a 5- to 7-quart oval enamel-coated Dutch oven and lid in cold oven. Preheat oven to 500°F (260°C).
  • Using a lame or razor blade, score top of loaf. Carefully remove hot Dutch oven from oven; remove lid, and place dough, still on parchment, in Dutch oven. Cover with lid, and place back in oven.
  • Immediately reduce oven temperature to 425°F (220°C). Bake for 30 minutes. Remove lid, and bake until an instant-read thermometer inserted in center registers 205°F (96°C), 10 to 15 minutes more. Immediately remove loaf from Dutch oven, and let cool completely on a wire rack.

Probably not the most helpful, I'll try again either this weekend or next with my starter and have my ducks in a row and report back.

The stars aligned today and I found myself with a grill, hardwood, fixings, and spare time for an asado.

It turned out just south of perfect as the marinade was a disappointment (orange juice, lime juice, garlic, salt & pepper). I think I'll stick with my usual soy sauce and lemon pepper next time. No complaints, though, as s good helping of chimichuri fixed everything.

The FK3 was a superb asado knife.
