Late night noods...with shrimps!

So far, preparing for dinner.

Prepared and smoked spinach and artichoke dip.

Smoking some veggies for salsa for the flank steak marinating for fajitas going on in about an hour.

Seriously. Smoked salsa is incredible….left the scotch bonnets out this time to tame it down a touch.

Everything from scratch. Flank steak fajitas in a pineapple Worcestershire sauce reduction. Guac. Smoked salsa and…I have to brag a bit….spinach and artichoke dip is amazing.

Practicing for tomorrow’s game.

Used some baking soda, paprika, garlic powder, pepper and salt to make a dry rub. Coated lightly with olive oil then then put rub on. Cooked at 375 for 45 minutes. Then another 30 minutes at 180. Wife said there is no reason for us to go back to BDubs. Might have jinxed myself.

How does everyone else cook them?

Tip: Put a wire cooling rack in the pan to get some air space under the wings. Here’s what I do if I have to use an oven (like I did for yesterday’s work Super Bowl party).

Try an opposite approach. First, do 250º for ~30 minutes. This gets some internal heat going, and begins to render the fat, which helps crisp the skin in the next stage. Then, crank it up to 425º-450º (depending on the oven; if a convection oven, 425º will do) for another ~45 minutes, turning once halfway after 20-25 minutes.

Almost as crispy as a fried wing!

Tomorrow I’ll just cook ‘em all in the Rec Tec pellet grill at 250º for 20 minutes, then 450º for another 40 minutes. Smoky and crispy! :cool:

For sauce, I use a 50/50 mix of these:

Best wing sauce I’ve ever had!!! 🤤 Got the recipe from an old pizza joint that, sadly, went out of business. Can add additional hot sauce if you like ‘em hotter!

Looks good!

I hear that tossing the raw wings with a little oil, corn starch, salt and your favorite spices, then baking at 450 until crispy is the way to go. The wire rack is also a great improvement.

I'm too lazy for that and usually just rub them with a pinch of garlic powder and a few pinches of lemon pepper, then bake at 425 until done. Then toss in Buffalo sauce. Suits me just fine.
