That's masterful.Chalupas with refried frijoles, ancho pork shoulder, guacamole, pico, and a little extra ancho salsa. I highly suggest frying your own tortillas before assembling; far superior to store bought.

Point of clarification: I did not make the tortillas. I bought the best quality corn tortillas I could find (HEB ftw) and fried them at home to crisp them up into chalupas. Still, much better than pre-fried tortillas.
I also didn't make the refritos: I didn't want to thaw out a quart of homemade for a small meal, so I opened a can of Blue Runner Creole Red Beans (which I HIGHLY recommend, if you can find them).
Everything else was homemade.
