I'm doing homemade chili tonight. I mean, it has to be healthy right?

Red beans, black beans, pento beans.. can of crushed tomatoes, chili powder, onion, red pepper flakes and ground round.

I think the ritz crackers are the only unhealthy bit.
 
Cold and windy outside today, I’m freezing. Got tied up for 2 hours on a Telemedicine call I was included into with my mom & her doc today. Missed lunchtime, so opted for something later that was filling, fast, tasted good, and would warm me up for later.

Grilled Ham & Cheese:

Super soft medium cut Deli White Breadi.
Sara Lee Honey Maple thin cut Deli Ham.
Deli Wisconsin Pepper Jack Cheese thin cut.
Fresh Red Bell Peppers cut into thin strips.
Fresh Jumbo Red Tomatoes cut thin.
Hellmamm’s Real Mayonnaise generously applied in layers.
Farmer Owned Land O Lakes unsalted Butter to gently fry each side over low heat.

1/2 Large Dragon Fruit for a later snack.

Haven't been there for awhile, so I stopped by Lockeford Meat & Sausage early this morning to stock up on a few meat products.

1) 2.5# Hot & Spicy Beef Sticks (12)
2) 2.5# Terriyaki Beef Sticks (12)
3) 2.0# Linguica sausage (4)
4) 6.5# Smoked Ham Hocks (4)
5) 1.75# Hot Italian Sausage (8)
6) 1.75# Mild Italian Sausage (8)

Except for the beef sticks that I could kill in a couple of days, this should last me for awhile. LOL! ;)
 
After stopping in Lockeford to stock up on meat, I headed to Logorio's Bar & Grill in Farmington, my favorite dive bar spot for grilled oysters.

Was going to have my regular order of 1/2 dozen grilled oysters and a large salad but (for some reason) they didn't have any salad mix, so I ordered a full dozen oysters instead along w/2 beers (Modelo draft, in this case) that I always order as well.

I mainly use them for in soups that I make with split peas, lentils & black eyed peas.

Unlike ham hocks that you usually find at the supermarket, Lockeford's ham hocks are very meaty. So, you also can braise/debone the ham hocks and serve the meat as a main w/beans & rice on the side.

There's also a shrimp & ham hock gumbo that I sometimes make with them.

Been wanting to try my hand at an Americanized Bistecca alla Fiorentina for a while. I found the perfect dry aged Porterhouse cut (40 ounces) the other day (kinda spendy) and gave it a shot this evening . . .

Turned out OK for a first try. Just ever so slightly overcooked, and I could work some on my carving technique.

Still . . . It was damn delicious.
