One of two 3# packages of corned beef that I bought on sale for $1.78/# at my local discount suprmarket.

A serving of the corner beef with yukon gold potatoes, chopped cabbage, sliced carrots & celery w/a dollop of a 50/50 mix of horseradish & Djion mustard and 1/2 of a sliced navel orange on the side.

I'm not Irish but Happy St. Pat's Day to those who are.
