What's the sharpest knife you ever owned?

Obviously the sharpest knife in the universe is the all titanium knife designed with collaboration between Bear Grylls and Chuck Norris produced by Gerber. The Grill Norris Super Ti Survival BBQ Tool with GPS, Meat Baster and pull through knife sharpener.

What! The new one's got a meat baster?!? Must have...
 
Like singularity35, I am not too concerned about how sharp it is OOTB. I usually use the factory bevel and see how it performs, then resharpen or reprofile if needed.

Sharpest out of box were the Spyderco Caly 3 and Bark River necker. Now I'm "into" sharpening, so it doesn't matter much how it is out of box, but it's nice not to have to reprofile right away. The Caly 3 is what caused me to try to get my edges to the next level. Was so much sharper than my other knives at the time.
 
My old ZDP-189 delica- I remember opening and closing it the first time, then wondering how gross it was that there was blood on it from the factory...Shorty after I noticed the tip of my middle finger bleeding. I really do need another one of those.

I don't think I have as much experience as most of you but my sharpest knife is the Trail Master San Mai III with the rolled edge.
 
Sharpest knife i've ever seen or owned out of the box: Mora "Triflex" and it didnt even come in a box lol...
For some reason, my (carbon steel) moras get sharper than anything i own with the least effort. Even better than my Aus-8 stuff too!
I mentioned Mora too, those Swedes and Finns really know how to do a work knife right.....for $10!!!!!
 
I'm sure any knife can be made sharp, but in general knives with Sandvik and VG-10 steels are the sharpest knives I have. Maybe my sharpening technique isn't ideal, but those two just seem to get wicked edges very easily.

The sharpest in general out of my collection of 40 knives or so is the Spyderco Centofante III. For some reason it seems sharper than the Delica 4, but a lot of that is probably pyschological.
 
My Dozier folding hunter was so sharp I cut myself examining it right after I got it

That's exactly what happened to me today, the first time I opened it.

Bronk over in Bothell, Washington sharpened a small hatchet for me a few years ago. I touched the edge veeerrrrrrryyyy carefully and still sliced my finger. I don't know how he got it so sharp, because the grind angle has to be huge. I remember he asked me when I took it in if I intended to use it to slice or chop. I told him chop. Either he got it backwards or slicing sharp is something you'd want to observe from another room, through a lexan window.

Sharpest knife I've ever owned would be my Caly 3.5. Out of box that thing was crazy, and still to this day, with some touching up on the sharpmaker, is still as sharp as I can remember. Hopefully my sharpening endeavors in the future can trump that memory of the unboxing my Caly...
 
I have posted on here before. I said my sharpest knife Out The Box was my Spyderco Zulu in S30V, the day I received it I had it bumped out of my hands and it cut my knee.. It took a few seconds for me to even know I was cut.. it didnt bleed for about a minute. I need six stitches for a tiny cut because it was so deep. After I sharpened it the Zulu was even sharper. A friend at work always touches the edges of the knives lightly to feel if they are sharp or not.. he did that to my knife, he just very very lightly touched the edge with his index finger and drew blood.

Well Ive had a few other knives since then and nothing has ever gotten sharper than that Zulu. When I sharpen my knives they all get to about the same sharpness, but the Zulu was also thinner than my other knives and was at 30* inclusive and my others are at 40* inclusive. Well I recently received a Benchmade Mini Bone Collector in D2 and this is the only knife that I have achieved a BETTER edge with. It is much sharper than my Zulu EVER was... and its at 40* inclusive! I dont know if its the steel or the thickness, or lack there of, or what but the edge is sharper than any knife I EVER had or handled. Which is good because I recently traded my Zulu.

The Benchmade Mini Bone Collector (D2) is not just so much sharper, but its also much tougher. The Zulu (S30V) would chip when cutting certain things, so I had to reprofile the angle from 30* inclusive to 40*inclusive to prevent chipping.
 
I didnt notice I had double posted so I decided to use this wasted space for new information. The Spyderco Zulu was my sharpest knife, as you can read from my last post right above this one.. Then I bought a Benchmade Mini Bone Collector, which became my sharpest knife, also as stated above.

Recently I bought a Benchmade Griptilian 550HG.. which I reprofiled to 40* inclusive on my Lansky Diamond Deluxe system + Ultra Fine stones & Super Sapphire stones, but I have heard that the Lansky angles are a bit off so it might be closer to 35* inclusive. This knife amazed me with its sharpness. Ive never had a knife in 154CM so this was my first time sharpening and feeling this steel. I have fallin in love with 154CM, so this steel on a Hollow Ground blade makes for an amazing edge.

right now, the zdp endura has to take a back seat to the 3.5 vg-10 caly. man that blade is ultra-thin. the edge didn't come in that sharp (i'm probably the 5th buyer on the bay) but a few minutes on my treated strop and it could take over the hair split by the endura (get it?) it must be the only knife i have that can be sharpened to the satisfaction of the people over at the shaving forum. but i dare not shave with it. tip is too pointy.
 
Sharpest production knife is sebenza, but thats dull compared to any of my yanagi (sashimi knives).

I have since sharpened the sebenza to satisfying sharpness.

(I roll mini california rolls and cut them for sharpness test because no dull knife could, dull knife smashes rice grain while mine sliced every grain)
 
I haven't noticed any significant difference in out of box sharpness from Spyderco, Kershaw, or most Cold Steel...nearly every product I've bought from all 3 companies has come extremely sharp out of box(Cold Steel's machetes and tomahawks are an exception), and none stand out as being any sharper than the others.

when i first saw it i almost blacked out.
had a really cheap black plastic vinyl(?) sheath which was lined with cardboard.
and when i drew out the blade, i discovered that it's edge was no toy.
it was paper thin and sliced great.
i grew to respect it and it sits ever ready to execute fine slices at the slightest touch.
it's only too bad that the sheath probably would not hold such a dangerous point for long out in the open.

The sharpest I seen out of the box, hands down, was a small Dfarmer in his L6. No need to touch up or re-profile the edge on his knives.
 
This Opinel Effile #8. I own it for over 10 years now and use it in the kitchen. It was my first Opinel and is the reason why I always have an Opinel in my cooking kit on camping trips.
