Which of my knives should I not carry on me?

Yes, it's excessive. Let me try to word this delicately. In my experience, when I have encountered someone that carries too many of something, be it knives, firearms, lighters, etc., they are often paranoid and a little more mentally unstable and unpredictable than I'm comfortable with. I'm not saying that's the case here, I'm just saying that's what I've seen before. So remember that might be the first impression that someone has of you, which can lead to awkward or tense situations. What do you do for a living that you need to carry that many knives?

For reference... the wood handles live on my belt and are the actual EDC, the 3 micarta handles are because it's Monday, the tiny whittler is my backup completely inoffensive knife and the slim spyderco lives in my Leatherman sheath in case of random steak:p

Well, I am aware I don’t need that many in daily life (kinda why I started the question), and I’m not really paranoid, I do really love how the blade moved the human animal from where we were prior to after, and even now, a blade (or several) can be an invaluable tool for self sufficiency and survival
 
If you feel it's excessive, carry less. If you don't, then don't carry less. You obviously don't "need" to carry that many knives, so it's just a matter of personal preference.

This always cracks me up. People before civilization didn't have so called formal training. It's called natural instinct and common sense. Throw your behind out in the wilderness unexpectedly and see how quickly you start learning to survive. Humans have persevered for a reason.

I haven’t had training, just reading to learn and then going out and doing. A week here and there I go out to unpopulated areas and live/camp with my backpack of gear, clothes, and blades

Most modern humans would be dead in a week if thrown into a survival situation.
 
Humans persevere because they are taught to by those who have experience and didn't get eaten by saber-toothed tigers. Let's be real, a lot of people have not survived. And I find the people that aren't trained bring a lot of useless junk with them, like 8 knives for example.

Agreed. Experience and training are 100 times more important than a bunch of fancy gear.

Sounds like you're on the right track. You're actually thinking about what you may or may not need. Just an idea, maybe try picking just one, two, three, or whatever and just going with it to change things up. Sometimes you can learn more by having to get by with less. I mention this because recently I have been doing the opposite, forcing myself to carry more than one blade or tool for the day. It helps me to look at things from a different perspective. Eventually, I'll weigh what I have learned and adjust accordingly, even if that's going back to carrying just one folder or fixed blade at a time.
 
I cant think of any reason I'd ever need 3 knives on me let alone 5, 6 or 7... at the very most 2. Even if out camping/survival(ing) id only have 2. A larger camp knife and a smaller fixed or folding knife would cover your bases.. if I had a dirty job like construction I'd probably only carry 2 also. A straight beater for the real dirty crap and a cleaner one for whatever else, cutting a sandwich or just whatever that wasn't straight abuse. Even at my job in the titanium foundry I worked in 1 knife was fine. My dirty little spyderco native took a beating for 5 years there. Even sandblasted the poor thing...

I would look at your load out and actually see what knives you use daily and what you don't. Quit wearing the ones you don't. Then out of the ones you do use I'd think ok, what knife did I use that the other ones I used absolutely couldn't handle what I used it for (Sorry if that was confusing) . If one can pull double duty then get rid of another. If anything just pick 2 and commit to carrying only 2 for a few weeks and I'd bet you'd find you can live just fine without 7 and will probably get to the point you don't even miss carrying 4 or 5 extras..
