Double shoulder, 8-9 oz thickness. You can get different quality and you may want to give them a call to see what they have as far as specials and if you can get smaller pieces than a full side.

I'd go with somewhere around 8 oz vegetable tanned leather, probably a shoulder would be good (that's what I started with from Tandy.) I think the quality of the piece I got from there is somewhat suspect, but it's convenient and you can buy a smaller piece to see if you like it before you want to invest in a large expensive piece from a better tannery. I also have and highly recommend the Wild Rose DVD for learning from scratch.
