You can only pick one knife to carry for the rest of your days here on earth

If we're not counting Multi-Tools as knives, I'd pick my Spydie Delica Wharnie. If for some reason a fire broke out in my house and I only had time for one handful I'd grab that Spydie and my favorite Leatherman.
