Northfield for me, should be a great knife. Instead of a lined bolster I wonder if they could do a rat tail bolster, probably not as they will most likely make the bolsters for the entire run of 86's. Top knife is an old Challenge bare end jack with rat tail bolster.

A chef knife works great for Spam.Yes, a long pull is very nice on some blades but not so much for a saber ground blade because as you're trying to slice your Spam with the saber ground blade, the long pull will fill with Spam as it passes through the Spam. The same would go for a roll of salami or bologna.

I have to disagree with you here, ED. I think you'd be more likely to experience that problem with a full flat grind than a saber grind. Here's a visual aid.
